When travelling, vegetarians have slim pickings on types of food they wish to eat, especially snacks. One reason attributed to this is that their food stores are among the hardest to locate, or available stores sell vegetable snacks alarmingly expensive. Due to this, some vegetarians are taking matters into their own hands by developing home-based tasty recipes. Here are trending vegan snack recipes even meat-eaters would love to prepare.

Vegan sandwiches

Making sandwiches is an art many of us were taught when we were just toddlers. But to come up with a satisfying plant-based sandwich that will last longer on a trip, follow this procedure.

You need; bread that does not contain eggs, milk, butter or animal products, margarine (from plant oils) and sandwich filings. For fillings, you can use vegetables, potatoes, beans, fruits, etc.

Toss a few slices of multigrain bread on a pan brushed with margarine, and leave the bread to burn until golden brown.

Take one slice of bread and start pilling sandwich fillers of your choice. When satisfied with the quantity and type of fillers added on the slice, take another slice and add it on top of the final layer.

However, instead of bread, you can use vegetable-based buns.

Bliss balls

Bliss balls are power loaded snacks you can always prepare a few minutes to trip. These dense sugar-filled snacks require cashews, almonds, flaked coconut, cocoa and any other suitable nuts you wish to add.

Pop some dates in a bowl filled with hot water and let them rest for a few minutes. This will leave them soft enough to form a nice smooth syrup when you mash them.

Place the mashed dates along with almonds, cocoa seeds, coconut flakes, and cashew nuts inside a food processer and switch it on.

After running for a few minutes, remove the dough-like mixture from the processor and roll it into small bite-size balls. During this step, you can apply your DIY skills and form your own shapes as long they are small and easy to bite.

If the mixture is too dry, add some date syrup to soften it. This will help you form smooth shapes.

Lastly, store the mixture in an airtight container; it is ready for a trip. If your trip is in a few days’ time, place the mixture in the fridge as you wait for the D-day.

Fruit salads

Preparing fruit salads is very simple; it all depends on your tastes and what fruits you want to include in the menu. For me, I bought a watermelon, strawberries, pineapples, grapes and some kiwi fruits.

Here is how I prepared the salad;

I peeled the watermelon, pineapple and kiwi fruits and sliced them in halves.

Since the watermelon and pineapple were too big, I used a small portion from each fruit which I chopped into small cubes.

I added chopped kiwi fruits, full-size strawberries and grapes into the mixture, which I packed in small glass jaws ready for the trip.
